My favorite flower - to eat!
Borage (Borago officinalis) - Not only is it a pretty flower in the garden, and in arrangements, it tastes good too! All parts of the plant are edible and the taste is reminiscent of cucumber. The flowers add a nice touch to salads, goat cheese, cream cheese, or in lemonade. Here's one of my favorite recipies that incorporates the leaves and the flowers:
Borage-Flavored Lemonade
1/4 cup of lemon juice
2-3 tablespoons of sugar
3-4 medium-sized borage leaves
2 cups water
Put all ingredients in a blender and blend for approximately 30 seconds. Strain into a tall glass, and garnish with borage flowers.
